Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a Puerto Rican potato salad. It is a nice spicy potato salad with a lot of flavors. It has green olives and lime juice, and some hot sauce. So here I have some redskin potatoes. I cut them into bit size pieces and I boiled them for five to ten minutes. It's long enough to soften them up but not so long that they're mushy. And here I have some chopped green olives. I'm also going to use a little bit of carrot. It's going to make it crunchy give it some color. Going to marinade it with lime juice. Some olive oil, some hot sauce, some salt, and some black pepper. This is going to be tasty right away. It's going to be even better in 10 or 15 minutes after the flavors have a chance to soak into the potatoes. So there you have a Puerto Rican potato salad.
