While guests come to a wedding reception expecting to celebrate a wedding, they also come expecting tasty refreshments. As any good host knows, keeping guests stuffed with food and drinks is an important party of any enjoyable party. While light nibbles might be appropriate appetizers for a dinner reception, hearty snacks are a better choice if you're planning to serve just appetizers at your reception.
Button mushroom caps work with almost any kind of stuffing and provide a convenient finger food for a wedding reception. Clean the mushrooms, cut off the stems and gently scoop out the spores. Saute each cap, stuff it, bake until golden and serve. Stuff each mushroom with mixture of crumbled bacon, blue cheese and walnuts to create a filling appetizer with a gourmet flavor. Stuff each one with a diced prosciutto, shredded mozzarella, dry breadcrumbs and pesto mixture to create a hearty appetizer with an Italian taste.
Bruschetta is a slice of crusty baguette usually topped with tomato and cheese. Turn the popular Italian appetizer into a hearty treat by adding meat. Cook shrimp and sprinkle with Italian spices. Slice baguettes and lightly brush each one with olive oil and roasted garlic. Add a tomato slice, cooked shrimp and mozzarella slice to each piece of bread. Lightly toast the appetizers until the cheese melts. Remove from oven, arrange on a platter and serve.
Mini quiches are an elegant selection if you want wedding reception appetizers with a creamy and hearty taste. Quiche is a crust filled with an egg and cheese mixture, as well as any other ingredients desired. Mini quiches require mini muffin tins and prebaked crusts or premade mini quiche shells to create. Whisk together eggs, cheddar, bacon and baby spinach to create simple bacon-spinach quiches or go Greek with eggs, feta, green onions, sun-dried tomatoes and minced lamb.
While they might be messy, zesty buffalo chicken wings are popular and filling appetizers for a wedding reception. Buffalo wings consist of fried chicken wings in a buttery hot sauce. Melt a little butter in a large bowl and stir in hot sauce. Cut, clean and fry the wings. Add the wings to the sauce, toss well and serve. Serve with a bowl of blue cheese salad dressing or sour cream for dipping.
Go gourmet with crab wonton appetizers at your wedding reception. In fact, you can stuff premade wonton squares with almost anything to create a tasty snack. Start with cooked and shredded crabmeat. Mix the meat with softened cream cheese and a little garlic. Drop a dollop of the mixture on each wonton, fold the square over to make a triangle and wet the seams to secure. Deep-fry the wontons and place on a paper towel to cool. Serve the wontons alone or with a light soy dipping sauce.
