How to Cook With Dill Weed & Seed
Dill weed is an herb whose seed and leaves can both be used in cooking. While many people may only be familiar with its use in making pickles, dill is much more versatile than that. The herb has a clean, refreshing taste that is reminiscent of lemon and caraway. You can use dill to add flavor to many dishes, like salads, fish, potatoes and bread, just to name a few. You can also use it to flavor vinegar. Don't be bound to any one recipe, but use fresh dill leaves, if you can. Use the seeds if you want a stronger, sharper flavor. Does this Spark an idea?

- Dill leaves, fresh
- Dill seeds, dried and whole
- Potatoes, peeled and chopped
- Water for boiling
- White vinegar
- Garlic clove, peeled
- Glass quart jar with lid, cleaned

Put the chopped potatoes in the pot and fill the pot with water. Bring to a boil and add one or two teaspoons of dill seed. After the potatoes are cooked, drain them. Add fresh dillweed to your chosen recipe and toss well. You can toss dillweed with fresh vegetable salads, too. The exact amount is not critical.

Make baked salmon steaks or fillets by first seasoning them with salt and pepper. Sprinkle with fresh dillweed before putting them in the oven. Mash any leftover fish with mayonnaise, adding dillweed or seeds to taste Chill and spread on crackers.

Flavor vinegar by placing fresh dill leaves or sprigs in a quart jar and add vinegar almost to the top so that the dill is completely covered. Add a peeled garlic clove, if desired. Put the lid on and place jar in a cool, dark place for several weeks. Shake the jar occasionally. Strain the vinegar and use as a dressing for fresh or cooked vegetables. Crush dill seeds and add to your dishes for extra flavor.

Tips & Warnings
Dried dill leaves lose their flavor quickly, but dried seeds last a long time. Trust your taste buds as to the amount of dill to add. Use the leaves for a milder flavor.
