Crown roasts come from the rib portion of a loin. The cut of meat contains two rib racks that form into a circle when tied together with twine. The finished crown roast looks attractive. The crown ribs generally face up while the meatiest portions face down onto a platter. Things You'll Need

  • 6 lbs. pork crown roast
  • Roasting pan with rack
  • Aluminum foil
  • 2 cups chopped cranberries
  • 1/2 cup sugar
  • Bowl
  • 1/2 cup butter
  • Skillet
  • 2 cups chopped celery
  • 2 chopped onions
  • 2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 8 cups dried bread cubes
  • 1 egg
  • 2 peeled, chopped apples
  • 1/2 cup apple juice

Instructions

      Heat the oven to 375 degrees Fahrenheit.

      Season the pork roast with pepper or salt if you desire. Place the pork roast on a rack in a roasting pan with the rib ends facing down.

      Cover the crown tips with aluminum foil to prevent them from becoming too dark. Bake the crown roast in the oven for two hours.

      Combine the cranberries with the sugar in a bowl.

      Melt the butter in a skillet over medium heat. Add the celery and onions and saute them until they are tender.

      Add the cranberry sugar mixture to the skillet. Add the salt, black pepper, bread cubes, egg, apples and apple juice. Mix the ingredients and set them off to the side.

      Remove the roast from the oven after two hours. Turn the roast over so the rib ends face up and fill the roast cavity with the cranberry and apple stuffing.

      Place a meat thermometer in the thickest part of the roast. Do not allow it to touch the rib bones because it will give you a false reading.

      Place the pork crown roast back into the oven. Continue to bake the roast for 90 minutes or until the internal temperature reaches 175 degrees Fahrenheit.

      Remove the roast from the oven. Allow it to cool on a platter for 15 minutes before carving.

Tips & Warnings

  • Cover the stuffing with aluminum foil if it browns too quickly.
