How to Prepare Flaming Greek Cheese

  • 1/2 fresh lemon
  • 2 oz. brandy
  • Pita bread

      Cut the Kasseri cheese into 1/4-inch-thick rectangles about half the size of a playing card. Set them aside.

      Preheat a cast iron skillet over medium-high heat

      Cut the lemon in half. Measure the brandy into a shot glass. Place the whole round pita breads on the table. Set a towel or small potholder on the table to hold the hot dish.

      Melt the butter in the hot skillet and add the cheese rectangles. Top them with the oregano.

      Cook the cheese until it starts to melt, but remains somewhat firm, about 2 to 3 minutes.
