Breakfast burritos do not have to have meat in them to be tasty. If you're a vegetarian who still eats eggs, if you are cutting down on your protein or if you just want something different, these burritos are for you. This breakfast is not difficult or time-consuming to create. Does this Spark an idea?

Things You'll Need

  • Pan
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cups chopped broccoli
  • 1 chopped Roma tomato
  • 2 tablespoons chopped onion
  • 1/4 cup chopped green pepper
  • Spatula
  • Small mixing bowl
  • Whisk
  • 6 eggs
  • 2 tablespoons milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded Colby Jack cheese
  • 8 flour tortillas
  • sour cream
  • salsa

Instructions

      Heat the oil and butter in the pan over medium heat.

      Add the broccoli, tomato, onion and green pepper. Saute until tender, stirring occasionally.

      Whisk the eggs, milk, salt and pepper in the small mixing bowl.

      Pour the egg mixture into the pan with the sauteed vegetables. Stir the egg mixture and vegetables until the eggs are set.

      Remove the pan from the heat.

      Sprinkle the cheese over the egg mixture. Cover the pan with a lid and let it set until the cheese is melted.

      Divide the egg mixture among the tortillas evenly. Serve with sour cream and salsa.
