Freshly baked spritz cookies are crisp and buttery, and they can be topped with frosting or kept plain until you plan to serve them. Because these cookies absorb moisture from the air, it is important to keep them in an airtight container. Spritz cookies can be kept for several days in an airtight container at room temperature before they begin to get stale and soft. Freezing spritz cookies is an ideal way to make sure you have fresh, crispy and delicious cookies on hand for months.

Allow cookies to cool completely on a wire rack. Keep in mind that if you place warm cookies in a freezer bag they will create condensation, which is moisture that can make your cookies soft and stale even in the freezer.

Place one dozen cooled cookies in a large freezer bag and squeeze out as much air as possible before sealing. Use a food saver vacuum device and its specially made bags if you have them.

Place the bags of cookies in the freezer in an area where they won't get crushed and store them for several months.
