Develop a marketing strategy to create customers and keep them. Decide the best way to penetrate the market and pay attention to the details. Develop cohesion by making everything including signage, menus, decorations, cups, and plates match the marketing scheme.

Find and purchase a vehicle that would be suitable for the type of food truck business you want to start. Clean the vehicle thoroughly as cleanliness weighs heavily when the truck is inspected. Lay down a tile floor in the truck. Select tile that is easy to clean.

Locate and purchase kitchen equipment and make sure that it is clean. The equipment should run off propane and not require electricity. Arrange the equipment in an efficient manner allowing easy access to propane shut-off valves for each piece of equipment. Mount propane tanks on the outside of the truck. Ensure the equipment is secure and will stay in place while driving.

Contact the county or city health departments to schedule an inspection of the truck. Check with the appropriate city offices to obtain any permits that are required.
