How to Clear Email Addresses From History on Apple Mail 1.3.11
When friends or colleagues change their email, you can delete their old address from the Address Book application, but they still appear in Apple's Mail application. Any email address sent to or from Mail is saved in the Previous Recipients list. To prevent sending mail to outdated addresses, you can permanently clear them from your history.

Open the Mail application.

Select "Window" in the Mail menu bar. Select "Previous Recipients"

Find the email address to delete and click "Remove From List"

Tips & Warnings
Do not delete an important address without adding it to Address Book. Once you remove an address from the Previous Recipients list, you will not be able to retrieve it again.
