How to Sharpen Wusthof Knives

To stay effective, Wusthof brand knives need to be sharpened routinely to cut well when used. Wusthof knives come in a variety of types that range from paring knives to chopping knives. The type of knife you have will influence how you are supposed to sharpen it. Many Wusthof knives come with a sharpening stone, which will save you a trip to the home improvement store. You should frequently lubricate your sharpening stone with sharpening oil.

Things You'll Need

  • Sharpening stone
  • Honing rod
  • Hold the Wusthof knife sideways, and touch the tip of the knife to the sharpening stone. If you are sharpening a paring knife, touch the tip at a 5-degree angle. If you are using a chopping knife, touch the tip at a 15-degree angle. Make sure the sharpening stone is on a sturdy bench or work desk.

  • Lock your wrists and work the edge of the knife blade back and forth against the sharpening stone. Sharpen the entire edge of the knife evenly.

  • Repeat the same procedure in the first two steps for the other side of the knife. Both sides of the knife should be sharpened evenly.

  • Hold the honing rod in place against a solid, flat surface that will not move. Without pressing too hard, rub one side edge of the Wusthof knife against the honing rod until you are satisfied with its texture and overall sharpness. Repeat this for the other side edge of the knife.
