Hold the Wusthof knife sideways, and touch the tip of the knife to the sharpening stone. If you are sharpening a paring knife, touch the tip at a 5-degree angle. If you are using a chopping knife, touch the tip at a 15-degree angle. Make sure the sharpening stone is on a sturdy bench or work desk.
Lock your wrists and work the edge of the knife blade back and forth against the sharpening stone. Sharpen the entire edge of the knife evenly.
Repeat the same procedure in the first two steps for the other side of the knife. Both sides of the knife should be sharpened evenly.
Hold the honing rod in place against a solid, flat surface that will not move. Without pressing too hard, rub one side edge of the Wusthof knife against the honing rod until you are satisfied with its texture and overall sharpness. Repeat this for the other side edge of the knife.
