Instructions

    • 1

Use slightly stale --perhaps week-old -- white bread.
Spread the butter on each slice of bread, then trim off the crusts.
Cut each slice of buttered bread into quarters. Grease a pie dish, then make a single layer of bread on the bottom of the dish. Distribute some of the currants and raisins on the first layer of bread. Sprinkle on a little of the superfine sugar.

    • 2

Add another layer of bread on top of the first, sprinkling the fruit and sugar as before. Repeat until all the bread and fruit are used up. Add the eggs to a bowl and beat them. Add the granulated sugar, rosewater and milk and stir well. Pour the egg mixture over the bread layers slowly and allow it to soak into the bread. Leave this to soak for about an hour.

    • 3

Just before an hour is up, preheat the oven to 325 degrees F. Sprinkle a little nutmeg and a little more granulated sugar over the top layer of soggy bread. Place it in the oven and bake about 70 minutes, or until the whole has become set. Cool on wire racks for 30 minutes, serve and enjoy.
