How to Make Irish Cabbage & Potato Stew
Irish cabbage and potato stew, a close relative of another Irish dish called "colcannon," is a wonderful addition to any meal, be it breakfast, lunch or dinner. Alternatively, the stew can be served over rice as a main dish. Warm, hearty and healthy, this stew is quite inexpensive to prepare. Make a double batch on Sunday, and you will be set for the week! Things You'll Need
- 2 cups cabbage, chopped
- 3 medium potatoes, diced
- 1 onion, diced
- 2 celery stalks, diced
- 1 carrot, diced
- One large pot
- 6 cups water or stock of your preference
- 2 tablespoons flour
- Small mixing bowl
- 1/4 cup parsley, chopped (or 2 tablespoons dried parsley)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Chop the cabbage and dice the rest of the vegetables.

Fill a large pot with water or stock, whichever you prefer.

Add vegetables to pot and turn on the heat. A medium-high setting is best.

Simmer for half an hour.

Mix flour with 1/4 cup of soup liquid, stirring until there are no lumps.

Add flour mixture to the pot and stir until thoroughly incorporated.
