How to Make Irish Cabbage & Potato Stew

Irish cabbage and potato stew, a close relative of another Irish dish called "colcannon," is a wonderful addition to any meal, be it breakfast, lunch or dinner. Alternatively, the stew can be served over rice as a main dish. Warm, hearty and healthy, this stew is quite inexpensive to prepare. Make a double batch on Sunday, and you will be set for the week!   • 2 cups cabbage, chopped
  • 3 medium potatoes, diced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 carrot, diced
  • One large pot
  • 6 cups water or stock of your preference
  • 2 tablespoons flour
  • Small mixing bowl
  • 1/4 cup parsley, chopped (or 2 tablespoons dried parsley)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

  1. Preparing a Delicious Irish Cabbage and Potato Stew

      Chop the cabbage and dice the rest of the vegetables.

      Fill a large pot with water or stock, whichever you prefer.

      Add vegetables to pot and turn on the heat. A medium-high setting is best.

      Simmer for half an hour.

      Mix flour with 1/4 cup of soup liquid, stirring until there are no lumps.

      Add flour mixture to the pot and stir until thoroughly incorporated.

      Simmer for 10 minutes.

      Remove pot from heat and add parsley, salt and pepper. Enjoy your stew!
