Powdered cinnamon is extracted from cinnamon sticks and is the common ingredient of homemade cinnamon caramel pecan rolls, also known as sticky buns. A staple in many grandmother's kitchens, these sticky sweet rolls can be difficult to master, but the pungent aroma of cinnamon and the sweet and gooey icing of these buns make them perfect for breakfast, dessert or as a snack.
Things You'll Need
- For rolls:
- 1 package (.25 oz.) dry active yeast
- 1/2 cup 2 percent milk, warmed
- 1 egg
- 1/3 cup melted butter
- 1/4 cup sugar
- 1/2 tsp. salt
- 2-1/2 cups all-purpose flour
- For caramel sauce:
- 1/2 cup (1 stick) butter
- 1 cup packed brown sugar
- 2 tbsp. corn syrup
- 1/3 cup chopped pecans
- For roll filling:
- 1 tbsp. butter, melted
- 1/2 tsp. cinnamon
- Large bowl
- Large saucepan
- 9-inch-by-6-inch baking dish
- Cooking spray
- Serving platter
- Stand mixer or electric beater
Make the Dough
Dissolve yeast into warm milk in a large bowl. Add egg, butter, sugar and half of the flour. Mix until smooth and add remaining flour to form soft dough.
Place the dough onto a lightly floured surface and kneed until elastic, about 7 minutes. Shape into a large ball.
Clean your large bowl and dry thoroughly. Grease the bowl with cooking spray and place the dough into the bowl. Turn once to coat with grease. Cover and set aside until dough doubles, approximately 1 hour.
Make the Caramel Sauce
Melt the butter in a large saucepan.
Add brown sugar and corn syrup and bring to a boil. Boil for two minutes, stirring constantly, until brown sugar is melted and the mixture is completely caramelized.
Spray the 9-inch-by-6-inch baking dish with baking spray.
Pour butter mixture into greased baking dish, sprinkle with pecans and set aside.
Punch the dough down and roll out onto floured surface to 1/4 inch thickness.
Spread butter onto rolled out dough and sprinkle with cinnamon and sugar.
Roll dough into a log, jelly-roll style, and pinch the ends to close.
Cut roll into eight equal pieces.
Place rolls on top of prepared caramel sauce and cover. Allow to rise until doubled, approximately 30 minutes.
Uncover and bake at 350 degrees for 30 minutes, or until golden brown. Invert onto serving platter and allow to cool slightly before serving.
Tips & Warnings
- For extra gooey rolls, double the caramel sauce portion of the recipe.
