How to Use Coconut in a Raw Diet

Raw-foods diets have been increasing in popularity. In a raw-foods diet, you eat only raw, uncooked whole foods or foods that have been heated no more than 112 degrees. Coconuts are particularly popular parts of the raw-food diet because they are easy to eat uncooked and are high in fiber, vitamins and essential nutrients. There are many raw-food recipes that use coconuts, including a versatile recipe for raw coconut milk. Does this Spark an idea?

  • 1 raw Thai coconut
  • Heavy, sharp knife
  • 2 bowls
  • Spoon
  • Measuring cup
  • Blender
  • Pitcher, jar or other large resealable container

Instructions

    • 1

      Cut open the coconut. Don't try to cut around the top of the coconut in a circle, like you would a pumpkin. Cut four lines through the top in the shape of a square---this is easier to do. You may need to do this more than once to get through the top.

      Open the lid. Use a knife or a spoon to pry the lid off if necessary. The coconut may be filled to the top with coconut water, so be careful when you open it that you don't spill any.

      Pour out all the water into your container. You can use a bowl or a large glass or cup. The amount of water in the coconut will vary, but in general your container should be large enough to hold 3 or more cups of water.

      Scoop the meat from the inside of the coconut using your spoon. The meat inside of raw Thai coconuts is soft, so any sturdy metal spoon should be able to get the job done.

      Place your coconut meat into another container.

      Add the coconut water and coconut meat to your blender.

      Blend the two together until you have a smooth milk.

      Store your milk in a pitcher, jar or other resealable container.

Tips & Warnings

  • You can find raw Thai coconuts at Asian grocery stores or some health food stores.

  • Since coconuts can vary in their ratio of water to meat, milks made at different times may have slightly different consistencies. This should not be particularly noticeable when you use it, however.

  • If your blender seems to be having problems processing the water and coconut meat, try adding a little more liquid or making it in smaller batches.

  • Don't use an overhand motion to stab into the coconut when cutting off the lid. Use controlled cuts low to the surface.
