Ingredients:
1 cup of warm water (105 F)
3 1/2 cups of all-purpose flour
2 tablespoons olive oil
2 teaspoons honey
1 teaspoon salt
1 teaspoon yeast -

Put warm water into a medium sized bowl. Add salt and honey and mix with a wooden spoon. Add the yeast, mix well and let set for approximately ten minutes. Gradually add flour and olive oil and knead with your hands until you have a smooth ball. If the dough cracks, it is too dry. Add water bit by bit until it forms a nice coherent ball. If your dough feels more like batter, it is too wet and you need to add flour bit by bit. If you need to add water or flour, do it by small amounts. Coat the dough with olive oil, place it in a large bowl and cover with plastic wrap or cotton dishtowel. Let the dough rise for about an hour at room temperature, then push it down again so it deflates. Let it sit for about another hour. The dough can be refrigerated overnight for the following day if you wish.

Ahhh, comfort food!When ready to bake the pizza, preheat oven to 450 degrees F. Place the dough on a lightly floured surface then sprinkle a small amount of flour on top and shape the dough into a circle by stretching it from the center outwards. Use a flour dusted rolling pin to to roll the dough until it is about 1/4 inch thick. To allow air to escape while the pizza is baking, punch holes in the dough with a fork. Top with pizza sauce and toppings of your choice. Bake for 20 to 25 minutes or until the crust is a light brown.
