Things You'll Need:
- Chinese flat noodles
- Peanut butter
- Rice vinegar
- Sugar
- Soy sauce
- Lime juice
- Ground cayenne pepper
- Sesame oil
- Green onion
- Baby spinach (optional)

Step 1
Boil 5 oz. of Chinese flat noodles according to package directions.

Combine 2 TBSP peanut butter with 3 TBSP boiling water and stir until the mixture is smooth.

To the peanut butter mixture, add 1 TBSP rice vinegar, 2 TBSP soy sauce, 1 tsp lime juice, 1/2 tsp sugar, 1/2 tsp sesame oil and 1/4 tsp ground cayenne pepper. Mix well.

Step 4
Place baby spinach in strainer and pour the pot of boiling noodles over the baby spinach to strain. The idea here is to slightly soften the baby spinach leaves. Pour noodles back into pot and add the peanut sauce. Stir until sauce covers noodles well.

Step 5
Top with desired amount of finely chopped green onion.
