How to Make Shrimp and Crab Ceviche - No Raw Ingredients

Save

Ceviche is a seafood dish native to the ocean-side regions of South and Central American. It is traditionally made with raw fish that is marinated, or cooked, in lime juice, but shrimp and other seafood are popular for inclusion in a ceviche recipe. By using cooked shrimp and imitation crabmeat, you eliminate the danger of using raw fish. The lime-cooked/marinated seafood is traditionally served on tostadas or tortilla chips and topped with avacado and pico de gallo, a spicy, uncooked condiment made of finely diced tomatoes, onions and peppers. You can serve ceviche in a bowl by itself, though, to create a low-calorie, low-carb dish.

Things You'll Need

  • 1 pound of shrimp, peeled and deveined
  • 2 garlic cloves, crushed or finely chopped
  • 1 tbsp. olive oil
  • 1/4 lb. crab meat or imitation crabmeat
  • 1 large onion, chopped finely
  • 4 large ripe tomatoes, chopped
  • 1 ripe avocado, diced
  • 2 cucumbers, peeled, seeded and chopped
  • 5 limes, juiced
  • 1 cup clamato juice
  • 2/3 bunch chopped cilantro
  • Salt and pepper to taste
  • Tostadas or tortilla chips
  • Pour olive oil in a shallow pan and sauté your garlic over medium heat, just until it begins to get a golden color -- be careful not to let it burn. Put the shrimp into the pan. Toss it to coat with garlic and olive oil. Sprinkle salt and pepper to taste. Shrimp cook quickly, so be careful not to overcook them. Remove from heat and set aside.

  • Finely dice the imitation crabmeat and set it aside.

  • Finely dice the red onion, tomatoes and avocado, and toss them into a large bowl. Add the lime juice to the onions and tomato mix.

  • Peel the cucumber. Cut the cucumber lengthwise and remove the seeds by scooping them out with a small spoon. Finely dice the cucumber and toss it into the bowl with the tomato and onion.

  • Finely dice the cilantro and add it to the mixture.

  • Add shrimp, crabmeat and Clamato to the mixture. Toss all ingredients to mix together. Sprinkle with salt and pepper to taste.

  • Serve on a tostada or in a bowl with tortilla chips on the side. Omit the tostadas and tortilla chips for a low-carb dish.

Tips & Warnings

  • Serve in a small bowl without chips for a low fat, low carb food.
