How to Make No-Bake Mud Pie Cookies

These cookies were a childhood favorite of mine. The recipe is not easy to find, but the cookies are very easy to make. Kids love the idea of eating a "mud pie".

Instructions
  1. Step 1

    In a large saucepan over medium heat, combine 1 1/4 cup granulated sugar, 1/4 cup butter or margarine, and 1/2 cup milk. Mix and keep on heat until mixture boils.

  2. Step 2

    Once mixture boils, remove from heat and add 3 cups quick cooking oats, 1/2 cup smooth (creamy) peanut butter and 1/4 cup baking cocoa.

  3. Step 3

    Mix well. Drop rounded tablespoonfuls on waxed paper. Allow to cool on the counter for about 15 minutes, and then place in refrigerator. Refrigerate until firm. Peel from waxed paper when cool and serve. If you wish, cut waxed paper into smaller squares and place in tupperware or other container. Store in refrigerator or cool place. These can be served cold or at room temperature, and they will keep for about 3 days.
