      Red skin potato salad is great for a summer side dish with hotdogs and hamburgers. You will need 6-7 medium size red skin potatoes, 1 cup mayonnaise, 1 tablespoon salt, 1 teaspoon pepper, 1 teaspoon garlic powder, 1 cup diced celery, ½ cup diced Spanish onions, paprika for garnish.

      Boil potatoes with skin on for about 25 minutes, set aside, drain water and let cool. Next, in large mixing bowl combine mayonnaise, salt, pepper, garlic powder, celery and onion. After potatoes are cooled cut into small squares and add to mixing bowl. Combine all ingredients and potatoes until well mixed. You can add some fresh rosemary for a special taste.

      Chill in refrigerator for about 2 hours. You can sprinkle paprika as a final garnish. You can also use regular peeled potatoes if you prefer, just follow the same recipe substituting the potato of your choice. Enjoy!!
