Making gluten-free brownies is easy! These brownies disappeared within ten minutes once I took them out of the oven. I do not own any gluten-free cookbooks, so I have to come up with recipes on my own when our gluten-free guests visit. These brownies are so good, that even those of us who are not gluten-free think they are awesome!

Instructions

Things You'll Need:

  • Sugar
  • Butter
  • Vanilla
  • Eggs
  • White Rice Flour
  • Tapioca Flour
  • Cocoa
  • Baking powder
  • salt
  1. Step 1

    Gather your ingredients:

    1 cup sugar
    1/2 cup butter
    1 teaspoon vanilla
    2 eggs
    1/3 cup tapioca flour
    1/3 cup white rice flour
    1/2 cup cocoa
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 teaspoon xanthan gum

  2. Step 2

    Preheat oven to 350 degrees. Grease an 8 X 8 pan with butter.

  3. Step 3

    In small saucepan, melt butter over low heat.

  4. Step 4

    In large mixing bowl, mix the sugar, vanilla and eggs. Stir until well blended.

  5. Step 5

    Sift together cocoa, white rice flour, tapioca flour, baking powder, xanthan gum and salt. Add to the egg mixture. Stir until blended.

  6. Step 6

    Add the melted butter to the brownie batter and mix until well blended. Pour into prepared pan and bake for 25 to 30 minutes.

Tips & Warnings
  • Adding Xanthan gum helps gluten-free items taste more like their wheat counterparts.
