Whether it’s for burgers, potatoes, hoagies, omelettes or anything else, this is the easiest, simplest “how to” recipe for making sautéed onions. No more crispy, burnt, over-cooked, hard onions. You can start enjoying your food with the sweet, tender perfection of sautéed onions, just like your favorite restaurant makes them. Ok, get your serrated knife and cutting board ready! It’s time to sauté some onions.

  • thinly sliced onion
  • butter
  • medium skillet (preferrably non-stick)

    Ok, my favorite way to cook sautéed onions is in butter. Good old, sweet cream, REAL butter. You can use the leftover oil or grease from whatever meat you were cooking, but you have to be careful. Some greases or oils will burn them up quickly. I prefer this method: Put your medium sized skillet on medium high heat. (preferably a non-stick skillet) Put enough butter in the skillet to coat the bottom well. I prefer to use the method seen in the picture. Pull back the paper and rub the butter stick around the clean skillet. The heat will cause it to melt as you go, evenly coating the skillet. If you don’t want to do it this way, just cut off about a tbsp, put it in the skillet and wait for it to melt.

    As stated in the ingredients, hopefully you had your thin sliced onion ready to go before you start heating your skillet. If not, remove your skillet from the heat while you prepare your onion now. If you leave it there, you run the risk of burning your butter and therefore making nasty onions. You’ll want to make sure you cut what looks like a little more than you will need for your sandwich, dish or recipe. The onions will cook up smaller than they appear to be now. Once the butter has started to turn slightly brown, put your onions in and turn the heat down to medium.

    You will want to stir your onions immediately to get them saturated in butter and then put the lid on. Let them go for about a minute. If they sound like they’re cooking very actively, turn the heat down just a little more. After about a minute take the lid off and stir them around again. You want to make sure they’re cooking evenly. (See picture) Put the lid back on for another minute.

    After about the 2nd or 3rd time you check them and stir, they should start looking like the picture here, which means they are very close to being done. At this point, it’s your call. You can pull them whenever they have reached your preferred level of completion. Some people like their onions a little more al dente than others. Don’t be afraid to taste a piece to gauge how much longer they’ll need to cook.

    Now pour them over whatever you wish. Add them to an omelette, pour them over steaks, over a cheeseburger or into your favorite casserole or rice dish.
