Things You'll Need:
- 1 lb white fish
- 1 egg
- 1/2 cup flour
- 4 TBLS water
- 2 TBLS cornstarch
- 1/4 cup water
- 1 cup canola oil
- 2 large peeled potatoes
- slat to taste

Step 1
First you will need to cut your fish into 3 inch long strips no wider than an inch and a half. Peel and cut your potatoes into fries shape toss in a small amount of canola oil. Then salt and pepper and put in the oven that has been pre heated to 350 degrees.

Now mix your batter. Combine the water, egg, and flour and whisk well. Then combine the second measurement of water and cornstarch. Then add this to your batter.

Now pre-heat the oil in the pan on hi heat. You will know its ready when the oil crackles when you sprinkle a drop of batter into it. Cover the fish when piece at a time in the batter and lightly drop it into the oil. Let cook for about five minutes of until the fish is golden brown. Keep an eye on the oil to make sure that it does not smoke. If it does turn it down.

At this point your fries should be ready. They take about 15-20 minutes. If you like them crispy finish them by turning the oven up to 450 degrees for 5 minutes. Now you can serve your homemade fish and chips with tartar sauce and a lemon wedge.
