Flax seed has 120 calories per tablespoon. This should make it easy to gain weight with flax seed oil but the problems is actually getting the oil into the body. Eating the oil by itself isn't very palatable to most and if the oil is cooked, then you lose the omega fatty acid benefits (antioxidant activity). The trick is to disguise the oil or to blend it so that the oily texture does not keep you from eating it.

      Make your own mayonnaise using flax seed oil. Throw two egg yolks into a blender with 3-tablespoons of lemon juice (freshly squeezed makes a difference), a pinch of white pepper, and a 1/4-teaspoon of salt. Blend it and slowly add 1/3-cup of flax seed oil to the mixture. Add paprika, black pepper, mustard powder, or other spices to taste. The mayonnaise will be yellow since it is real mayonnaise (not the store-bought type). The mayonnaise should keep in the refrigerator for at least three days.

      Make a vinaigrette using flax seed oil. Traditional vinaigrettes are simply made with olive oil and vinegar shaken together in a half and half mixture every time before they are to be used (since oil and vinegar do not stay mixed). Use a vinegar of your choice (I prefer red wine vinegar which is so called because it is made from grapes) mixed with flax seed oil. Use the flax seed oil blended with extra virgin olive oil to add flavor or use it by itself. Put the ingredients in a jar, put on the lid, and shake well before pouring on salad. Add the salt and pepper to the salad after the vinaigrette so that it sticks to the salad leaves and the salt does not get lost in the dressing before it gets to the leaves.

      Make your own peanut butter with flax oil. Throw two cups of peanuts in the blender and turn it on. Carefully add more peanuts to the blender. Remove the handle from the lid with a twist so the lid has a small open hole in the top. As the peanuts start to blend and you add more, natural oils will form. When you have enough peanut butter, pour the entire mixture into a jar and refrigerate. The next day, skim the oil off of the top and add the flax seed oil in its place. Flax seed oil is the healthier alternative and, though all of the peanut oil will not be gone, it will be decreased. Try other nut varieties for fun.

      Make a spicy oil. Put the flax seed oil into the blender. Use a small amount (1/8-cup) will do. Scrape the seeds out of hot peppers and drop them into a mortar and pestle. When you have a half cup of seeds, crush the seeds and throw them into the blender. Blend the oil and seed mixture on pulses 2 second long. To decrease the potency of the oil, throw in the rest of the peppers and continue to blend (without the stems). Pour this oil into an empty/clean baby food jar. Put on the lid and refrigerate for one week before using. If spicy oil is too hot, use other herbs and spices to invent your own flavors.

      Make a creamy spread. Blend the flax oil with butter to soften the butter and make a spread. Add a soft cheese and basil for extra flavor. Put this directly onto toast or bread. This is a wonderful substitute for cream-cheese and a way to get a sizable dose of flax seed oil.

Tips & Warnings

  • Refrigerate flax oil (and anything that you make containing it) to maintain potency and keep the oil from going rancid. Taste the oil when you first buy it and throw it away if it tastes rancid (sometimes described as a paint-oil taste). Rancid oil is toxic since oxidized fats are present. Check the oil occasionally to see if it is rancid. Keep the oil away from light and moisture. Only buy the oil if it comes in opaque bottles or bottles that do not allow light through them.
