How to Make Oven-Baked Chicken Breast Fingers
Chicken nuggets are a staple for many kids but the processed, breaded chicken from fast food restaurants or the grocery store freezer section isn't always a healthy choice. Make your own chicken fingers using sliced breast meat and a simple, crispy coating. Add 1 teaspoon of cayenne pepper to the coating mix if you'd like to give the chicken a spicy kick. Things You'll Need
- 4 boneless, skinless chicken breasts
- 2 cups skim milk
- 1 package crispy coating mix
- Cooking spray
- Salt and pepper
- 1-quart zip-close bag
- Baking sheet
- Spatula

Preheat the oven to 350 F. Spray a baking sheet with a thin layer of cooking spray. Slice the thawed chicken breasts into 1/2-inch-thick strips

Pour the skim milk into a shallow dish and submerge the chicken strips in the milk for 5 minutes.

Empty the coating mix into a zip-close bag. Move 4 to 6 chicken strips to the bag at a time and shake until they are covered with the coating mix.

Remove the chicken from the bag, shake off the excess coating and place the strips on the baking sheet. Leave 1/2-inch of space between strips. Continue until all the chicken fingers are coated and on the baking sheet.

Bake the chicken fingers 10 minutes and then flip each one over and move back to the oven for another 10 minutes. Remove from the oven and allow to cool for a couple of minutes.

Season with salt and pepper and then serve.

To make these spicy chicken fingers, add in one teaspoon cayenne pepper to your bag of crispy coating mix.
