Delicious Vietnamese Egg Rolls

If you like egg rolls, then you'll love Vietnamese egg rolls! They are different than the ones filled with a bunch of cabbage and little meat, in fact they are packed full of flavorful meat and shrimp. Yummy!

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 pound ground pork
  • 1/2 pound chopped shrimp (peeled and deveined)
  • 1/2 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 carrot (shredded)
  • 1 green onion (chopped)
  • 2 small bricks of asian glass bean noodles
  • 2 eggs
  • 1 pack of Egg roll wrappers or rice paper.

  1. Step 1

    Bring a pot of water to a boil, and add glass bean noodles. Cook till tender, and drain. With scissors, cut the noodles in a large bowl into little pieces.

  2. Step 2

    To the noodles, add the ground pork, shrimp, onion, garlic, green onion, carrot, and 1 egg. Then season with salt, pepper, cayenne pepper, and accent salt, and blend all the ingredients together thoroughly.

  3. Step 3

    In a small bowl, add just the yolk of the other egg, and set aside.

    open the pack of Egg roll wrappers, and place a wrapper on a cutting board, put about 2 tablespoons of filling in the center of wrapper, and roll tightly according to the directions on the back of wrapper package. Dab a small amount of egg yolk on the end to seal.
    Continue rolling egg rolls till there is no more filling, or wrappers.

    Heat oil in a pan on medium heat, wait till hot (should sizzle at drop of water) place egg rolls in pan and cook for 5-8 minutes per side. Remove from pan and place on paper towels to cool.

  5. Step 5

    Place some red leaf and green leaf lettuce and a few slices of tomatoes on a serving dish, and transfer the egg rolls. Delicious as is or with your favorite sauce. Enjoy!

Tips & Warnings
  • Be careful, the egg rolls will be very hot!
