How to Make Chocolate Dipped Peppermint Cookies

Instructions

Things You'll Need:

  • Ritz Crackers
  • 2 tbs butter
  • Chocolate chips
  • Peppermint candies
  • Wax Paper
  1. Step 1

    Cover your counter top with wax paper. Spray with a non stick spray.

  2. Step 2

    Place peppermint candies in ziploc bag. Using a meat mallet or rolling pin, finely crush the peppermints.

  3. Step 3

    Melt the butter in a double boiler. If you don't have a double boiler, you can fill a sauce pan 1/2 way with water. Place a glass bowl the size of the pan opening inside the pan. This will allow the butter and chocolate to melt from the steam.

  4. Step 4

    Once the butter has melted, add the chocolate chips. I use a half to a whole bag of chocolate. Stir the butter and chocolate mixture until melted throughly.

  5. Step 5
     

    Dip the cracker into the chocolate mixture so that the chocolate covers at least half of the cracker. Allow the excess chocolate to drip off the cracker.

  6. Step 6

    Dip the cracker into the crushed peppermint. The peppermint should adhere to the chocolate. Place the cookie on the wax paper. Allow the chocolate to harden before removing from the wax paper.

Tips & Warnings
  • Chocolate and butter can also be microwave in short intervals. Microwave on high for 30 seconds. If not completely melted, microwave for 15-20 seconds more. Repeat until melted.
  • Be careful not to overcook your chocolate.
