How to Make Chicken Rollatini

This is such a easy chicken dish to prepare. And their are so many variations to this recipe. I think that this recipe has so much flavor and depth to it. And is simple and but elegant. I serve this during Easter and Christmas.

    Things You'll Need

    • 3 large eggs
    • 1 lb chicken cutlets
    • 2 cups bread crumbs
    • 1/4 lb ham
    • grated cheese
    • shredded mozzarella
    • toothpicks
    • baking dish
    • 2 tbsp oil
    • 2 cloves minced garlic
    • 16oz quartered mushrooms
    • 1/2 tbsp flour
    • 3/4 cup marsala wine
    • 2 tbsp butter
    • 1 tbsp chopped fresh parsley

        The first thing that you want to do is preheat your oven to 350 degrees.

        Now you will want to bread the chicken cutlets. So in a bowl beat the three eggs with 1 tbsp grated cheese beaten into the egg mixture as well. And in a separate plate add the bread crumbs. And add the mozzarella and the ham in separate dishes as well. Make sure to also have the toothpicks ready.

        So now that we have the breading and stuffing station ready we can start to bread the cutlets. so take a chicken cutlet and dip into the egg mixture. And then dip the chicken now into the bread crumbs. Set that cutlet on a separate dish separated until all of the chicken cutlets are breaded.

        Now that all of the cutlets are breaded and lined up. Go ahead and take a slice of ham and fold in half long ways and lay the folded piece of ham over a chicken cutlet. Do this to all of the chicken cutlets with a piece of ham folded on top of the chicken.

        Now that all of the cutlets have a slice of ham on them go ahead and add some shredded mozzarella over each piece of chicken with the ham on in.

        Once all of the cutlets have the ham and mozzarella on them you will want to roll up the chicken cutlets with the ham and mozzarella. So starting on the bottom just take the bottom part of the chicken and fold up ward and roll up. And use three toothpicks to hold the rolled up chickken cutlets in place. Do this to all of the chicken cutlets.

        Now transfer the rolled up chicken cutlets to a baking dish and set aside while we prepare the sauce.

        In a large skillet over medium high heat add the oil. And allow that to heta up.

        To the skillet of oil add the mushrooms with salt and pepper to taste and allow the mushrooms to get slightly tender. Stirring ocassionally. This should take about five minutes. You don't want the mushrooms too soft they will bake and get more tender.

        Now sprinkle the flour over the mushrooms. To absor up most of the oil and this also allows the sauce to thicken up. So stir in the flour. And once the mushrooms are coated with some flour and you see no more white.

        Go ahead add add the marsala wine into the pan with the mushrooms. Stir that all together well. And allow the marsala wine to cook down slightly. And toss in the chopped parsley to the wine and mushrooms. And add the butter to the pan and stir. When the butter is melted. Take the sauce and pour the sauce over the pan of rolled up chicken.

        Put the pan of chicken with the sauce in the oven for 45 minutes to 1 hour. The top of the chicken will be brown and the cheese will be melted and pouring out of the sides.
