How to make the BEST fresh Spinach Pasta

There is no comparison to fresh made pasta. Making pasta with spinach is the same as basic pasta dough. Adding spinach to the dough is a great way to get green vegetables in to your family.

Things You'll Need

  • 4 cups flour
  • 4 large eggs
  • 1 (10 oz) package frozen spinach, thawed
  • Food Processor
  • Heavy duty electric mixer - KitchenAid w/dough hook attachment
  • Pasta cutting machine
  • Cook spinach in microwave oven for 7 minutes stirring half way through.

  • Drain, strain off liquid. Cool and squeeze out any excess liquid.

  • In a food processor; puree the cooked, cooled spinach.

    Add the egg to the spinach; pulse to combine.

  • Pour the flour into a heavy duty mixer (KitchenAid) with a dough hook attachment. Add the spinach & egg mixture.

  • Slowly incorporate flour into eggs/spinach mixture until a nice dough is formed.

    Knead by hand or by machine until smooth as baby skin about 10 minutes.

  • Cut pasta as desired.
