How to Make Slow Roasted Chicken
Easy to make in either the oven or a slow cooker, roasted chicken can have a variety of flavors and side dishes. A simple roasted chicken contains just a few ingredients; however, the moist meat and seasonings are perfect for any meal. Leftovers are also great for salads, wraps or sandwiches the next day. Things You'll Need
- 1 roasting chicken
- Salt and pepper
- 2 tsp. dried sage
- 1/2 tsp. dried rosemary
- Sliced carrots
- Quartered red potatoes
- Quartered onions

Heat the over to 350 degrees, and put a roasting rack into a large roasting pan. Rinse the chicken before adding the seasonings and pat dry.

Place the chicken on the roasting rack and rub in salt, pepper, sage and rosemary. Add quartered red potatoes, carrots and onions to the roasting pan (around the chicken) to make a complete meal. You can add 1/2 cup of water to the vegetables to make a broth for them to cook in if desired.

Roast the chicken until it is golden brown and the meat thermometer reads 180 degrees. The best place to measure the chicken is in the thigh, but not near the bone. Check the chicken after about 1 hour and 45 minutes to see if it is ready, and that the thermometer shows it is fully cooked.

Serve the chicken with the roasted potatoes, carrots and onions for a nutritious and tasty meal. Leftovers can also be used to make soups or sandwiches the next day.

Tips & Warnings
Be sure that poultry is cooked to the proper temperature. Rely on your meat thermometer to indicate the proper cooking time.

I don't see any instructions on how to make this work in a slow cooker though...so I don't know why they mentioned it.
