If you like toffee, you will enjoy this easy recipe for Toffee Bar Cookies. Try not to eat them all in one sitting!

Instructions
  1. Step 1

    INGREDIENTS:

    1 cup butter or margarine, softened
    1 cup packed brown sugar
    1 teaspoon vanilla
    1 egg yolk
    2 cups all-purpose flour
    1 3/4 cups Heath toffee bits, divided (found in the baking aisle)
    1 12-ounce bag chocolate chips

  2. Step 2

    In a large mixing bowl, beat butter until creamy. Mix in brown sugar, vanilla and egg yolk. Stir in flour and 1 cup toffee bits. Press into an ungreased 9x13 baking dish. Bake at 350 degrees for 18-20 minutes or until light brown.

  3. Step 3

    Remove from oven and immediately sprinkle chocolate chips over top. Let stand about 5 minutes until chocolate chips are soft. Spread evenly over top. Sprinkle remaining 3/4 cup toffee bits over top.

  4. Step 4

    Refrigerate 20 minutes, or until chocolate is set. Cut into bars and enjoy.

Tips & Warnings
  • Store in an air-tight container.
  • Toffee bits can be found in the baking aisle next to the chocolate chips.
