Spelt bread is a wonderful alternative for people who are intolerant to gluten or need a wheat-free loaf. This old-fashioned recipe is is tried and true -- and easy to prepare. Does this Spark an idea?

  • 2 9-by-5-inch loaf pans
  • 8 c. organic spelt flour
  • 1/2-c. sesame seeds
  • 1/2-tsp. salt, or to taste
  • 1 tbsp. blackstrap molasses
  • 2 tsp. baking soda
  • 4-1/4 c. organic milk

Instructions

    • 1

      Preheat the oven to 350 degrees F. Meanwhile, grease two 9-by-5-inch loaf pans.

      Mix together the spelt flour, sesame seeds, salt, molasses, baking soda and milk in a large bowl until well blended.

      Divide the batter evenly between the prepared pans.

      Bake the bread for 1 hour and 10 minutes or until golden. Placing a tin of the same size over the top of each loaf while baking gives it a lovely crust.
