A delicious option to add to any meal, a Greek Salad has lots of flavor and is perfect for those summer months.

Instructions

Things You'll Need:

  • 6 cups Romaine lettuce or salad greens
  • 8 cherry tomatoes or 2 tomatoes, diced or wedged
  • 1 cucumber, cut in half and sliced thin
  • 1 small red onion, diced
  • 1/2 cup pitted Kalamata olives
  • 2 ounces of Feta cheese, crumbled
  • Greek Vinaigrette dressing
  • 2 pita bread rounds, wedged

    How to make a Greek Salad

  1. Step 1

    Wash and peel all salad and vegetables. Then chop or dice the cucumber, onion and tomatoes into bite size pieces and set aside.

  2. Step 2

    Tear the lettuce into edible sizes and place into a salad bowl. Add the cucumber, tomatoes, onion, Kalamata olives, and Feta cheese and toss gently, mixing all ingredients together.

  3. Step 3

    Add a store bought Greek Vinaigrette to the salad bowl and toss again, coating all the ingredients. A homemade Vinaigrette can taste even better, if there is enough time to mix one. In order to make one, combine the following ingredients:2 Tbsp Olive Oil2 Tbsp lemon juice2 tsp fresh oregano1/8 tsp salt18 tsp black pepperCombine in a jar, cover and shake well. Makes 1/4 cup of dressing

  4. Step 4

    Serve the tossed salad into bowls and add wedges of Pita bread either on the side or top of the salad.

Tips & Warnings
  • You can also add other ingredients like green Bell Peppers or Pepperoncini to enhance the flavor
  • Perfect for a low-cal meal, with approximately 105 calories per 3/4 cup
  • Be sure to wash salad and vegetables thoroughly
