Things You'll Need:
- Vegetables cut into chunks or slices
- Vegetable or olive oil
- Salt and fresh ground pepper
- Pastry or basting brush
- Electric or charcoal smoker

Step 1
Start your charcoal in a charcoal smoker or turn on your electric smoker on high to let it heat up.

Cut up your vegetables into slices or chunks. You can use just about any vegetables, from mushrooms, squash, corn to asparagus. If you can grill a vegetable, you can smoke it and they'll take on a richer, more flavorful quality when you smoke them.

Lightly brush the vegetables with oil, then season with salt and pepper.

If the slices are big enough, you can place them directly on your smoker's grill. However, if they are too small, place them on a baking pan or a perforated grill pan made especially for small items.

Place the veggies on the smoker and reduce the heat to low.

Check the veggies frequently to make sure you don't overcook them.

Remove the veggies when they are cooked through but not too soft. They make a great addition to any dinner.
