Fufu is a traditional West- and Central-African food and can be made from a variety of starchy root vegetables, such as cassavas or yams. The vegetable is boiled and then mashed and beaten together, often with plantains, cocoyam, or maize, using a mortar and pestle to create a thick paste or dough. Fufu is often served with a chicken soup. It is usually a basic, light soup made from a chicken thigh, vegetable and broth mixture, but can be combined with pureed peanuts or other legumes and root vegetables and either poured directly on the fufu or on the side. The two dishes are eaten together, by hand, with the diner using the fufu as both a utensil and a food. Does this Spark an idea?

      Wash both hands well with soap and water.

      Stick your fingers in your chicken soup to find your fufu if it is submerged.

      Pull off a small piece of the fufu, roughly the size of a small marble.

      Using your fingers or thumb make a small indentation in the fufu and, using the fufu ball as a utensil, scoop up a portion of the chicken soup and meat and put it in your mouth.

Tips & Warnings

  • Chewing fufu is often seen as a faux pas. Pull off pieces small enough to swallow whole, if possible.
