How to Make Southwest Egg rolls

These tasty little rolls are a new twist on an old favorite. Experiment with interesting dipping sauces to compliment your southwestern creation. Although these are perfect for an appetizer, throw a little salad together and you have a wonderful meal!

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Heavy skillet or wok
  • 3-5 c cooking oil
  • flour tortillas
  • 2 c finely chopped chicken
  • 14 oz can corn
  • 14 oz can black beans
  • 3 green onions chopped
  • 1/4 c chopped cilantro
  • 1/2 c cheddar cheese
  • 1/4 c favorite salsa

Step1
In skillet or wok preheat oil
Step2
In large bowl, mix all ingredients, except tortillas, thoroughly
Step3
Take one tortilla and place on flat surface - spoon 2-3 spoonfuls of chicken mixture onto on end of tortilla
Step4
Roll tortilla 1 time around, fold in side edges and then continue to roll until done.
Step5
Complete above step until all mixture is wrapped
Step6
Cook 2 at a time, over medium heat for approximately 5-7 minutes, turning to ensure even brownness
Step7
Drain on paper towels and serve with dipping sauces such as sour cream or salsa

Tips & Warnings

  • You can substitute traditional egg roll wrappers for flour tortillas for a lighter shell
