How to Make Low-fat Banana Bread

Banana bread is one of my favorite desserts. It's not too sweet and it doesn't have to be too fattening either.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups of all-purpose unbleached flour
  • 1/4 cup of rye flour
  • 1 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of powdered ginger
  • 1 teaspoon of lemon juice
  • 1/3 cup of evaporated skim milk
  • 3 tablespoons of frozen orange juice concentrate
  • 1 cup (2 bananas) of ripe bananas mashed
  • 2 egg yolks
  • 1/3 margarine
  • A few sprinkles of cinnamon
  • 2 mixing bowls
  • 9x5 loaf pan
  • Nonstick cooking spray
  1. Step 1

    Coat the botton of the loaf pan with nonstick cooking spray.

  2. Step 2

    Combine the all-purpose flour and rye flour with baking powder, baking soda, salt and ginger in a mixing bowl.

  3. Step 3

    In a separate small bowl, mash the bananas and mix with the lemon juice. Set aside.

  4. Step 4

    Combine the orange juice, margarine, egg yolk and milk in a large bowl.

  5. Step 5

    Add in the mashed bananas and other dry ingredients to the large bowl in Step 4.

  6. Step 6

    Add mixture to the loaf pan and place in the oven.

  7. Step 7

    Bake at 350 degrees for about 1 hour.

  8. Step 8

    When it is done, top it off with a few dashes of cinnamon.

Tips & Warnings
  • For extra flavor, add 1/2 cup of pecans or chopped walnuts
  • Pay special attention to your measurements. Don't put too much of anything or you can come out with a flat banana cake instead banana bread!
