Things You'll Need:
- 1/2 block silken tofu (about 5 ounces)
- 2 tbs. olive oil
- 2 tbs. fresh lemon juice
- 1/4 tsp. dijon mustard
- 1/4 tsp. salt
- Dash of ground black pepper, or several splashes of hot pepper sauce
- 1 tablespoon chopped scallion bulbs, or 1 small garlic clove (optional)

Step 1
Place all ingredients in a blender or food processor and whirl until smooth.

Step 2
Add a tablespoon of water if the mayonnaise seems too thick.

Step 3
Cover and refrigerate, the mayonnaise will keep for about a week.
