How to Make Vegan Mayonnaise

Eating a vegan diet means giving up all animal products, including eggs and cheese. Making this mayonnaise with tofu rather than eggs creates a more healthful, cholesterol-free alternative to regular mayonnaise. This vegan mayonnaise can be substituted for regular mayonnaise in any recipe.

Instructions

Things You'll Need:

  • 1/2 block silken tofu (about 5 ounces)
  • 2 tbs. olive oil
  • 2 tbs. fresh lemon juice
  • 1/4 tsp. dijon mustard
  • 1/4 tsp. salt
  • Dash of ground black pepper, or several splashes of hot pepper sauce
  • 1 tablespoon chopped scallion bulbs, or 1 small garlic clove (optional)
  1. Step 1

    Place all ingredients in a blender or food processor and whirl until smooth.

  2. Step 2

    Add a tablespoon of water if the mayonnaise seems too thick.

  3. Step 3

    Cover and refrigerate, the mayonnaise will keep for about a week.

Tips & Warnings
  • This recipe makes about 3/4 cup of mayonnaise.
