Things You'll Need:
- 2 envelopes of unflavored gelatin
- 2 tbsp. cold water
- ½ cup boiling water
- ½ tsp. sugar
- ½ tsp. salt
- ½ tsp. vanilla
- Flour
- Chocolate bark for dipping
- 1 egg
- Flat pan
- Double boiler
- Large mixing bowl
- Mixer
- Parchment or waxed paper

Step 1
Prepare the Easter egg molds. Place about 2 inches of flour in a flat pan. Take an egg and push it into the flour to make a mold. Make 26 egg-shaped indentations.

Place the bottom section of the double boiler on the stovetop. Add water. Let water come to a simmer.

Put gelatin in the top of the double boiler. Stir in the cold water until the gelatin softens. Add the boiling water and stir well. Mix in sugar and salt. Stir until the sugar is no longer gritty. The mixture should be clear.

Transfer the gelatin and sugar mixture into a large mixing bowl. Beat the mixture at the highest speed on your electric mixer. Mixture should be thick but should not form stiff peaks. Stir in vanilla.

Drop marshmallow mixture into the flour. Make sure the top of the marshmallow mixture is flat. Sprinkle a little flour over the top of the egg molds.

Set Easter eggs aside to set for a couple hours. Set the mixture in a cool place to speed the setting process.

Melt chocolate bark in the microwave. Remove set Easter eggs from the flour. Dip them in the chocolate. Set them on parchment paper or waxed paper to cool. Frost with decorator icing, if desired.
