Things You'll Need:
- 1 tablespoon / 15ml vegetable oil or low-fat cooking spray
- 225g onions
- 1 clove garlic
- 1 teaspoon sugar
- 2 teaspoons flour
- 425ml vegetable or chicken stock
- 1 tablespoon / 15ml soy or Worcestershire sauce
- 1 teaspoon mustard

Step 1
You can either heat up a little oil in the frying pan, or preheat the oven depending upon how you cook the sausages. They will have to go into an oven after being fried, so be careful not to overcook them.

Make the batter. Either tip or sieve the flour into a mixing bowl. Let it heap up in the middle of the bowl. Make a well in the centre of the flour. Break the eggs and pour them into the well.

Using a wooden spoon, mix the eggs and flour into a sort of paste and gradually add more flour, milk and water. As soon as the flour has been incorporated, add the rest of the milk and water. Stir.

Heat some oil in a dish or tray. When the oil starts smoking, add the sausages. Add the batter over the top of them and cook for 30 to 40 minutes. Keep checking the sausages; cooking times may vary depending upon the size of the dish or tray. The Toad in the Hole is ready after it puffs up and turns golden brown.

Combine the oil with the garlic, onions and sugar into the saucepan. Cook over a low heat. It depends upon personal preference how long you cook the onions for, but the longer they cook, the greater the impact to the flavour of the gravy.

Add the flour and stir in well before adding the stock, mustard and sauce. Bring this to a boil, and then simmer for about 5 minutes. If you want more flavor, salt and pepper to taste.
