      Buy the largest Spanish green olives you can find. Also, buy blue cheese, but on't spend a lot of money on it. Save the high end blues for crackers or cheese platters. For every jar of olives, you will need only 2 ounces of cheese.

      Place your olives in the olive pitter and squeeze. The pit should pop right out. Discard pits.

      Slice the blue cheese into small rectangles that will fit into your newly pitted olive.

      Stuff your olives. If you need help getting the cheese into the olive, use a toothpick.

      Return the stuffed olives to the jar and store in the fridge. Make sure you keep the olive juice in the jar so that the olives continue to marinate. Your blue cheese olives will keep for about two months.
