How to Make Shrimp Scampi

Shrimp scampi is a deliciously decadent Mediterranean seafood dish whose origins seem to be lost to history. This rich, buttery treat is simple to prepare. Just follow this recipe.

Instructions

Things You'll Need:

  • 1 ½ lbs. peeled, deveined shrimp
  • Salt
  • 2 tbsp. unsalted butter
  • 2 tsp. minced garlic
  • 1 tbsp. lemon juice
  • ¼ tsp. lemon zest
  • ¼ cup dry vermouth
  • 2 tsp. freshly chopped parsley
  1. Step 1

    Purchase 1 ½ lbs. of white or pink shrimp that has been peeled and deveined. Wash thoroughly and drain well.

  2. Step 2

    Place the shrimp on a flat surface or plate evenly spaced and pat dry.

  3. Step 3

    Salt the shrimp and let sit for 10 minutes.

  4. Step 4

    Peel and chop 3 to 4 cloves of fresh garlic. You also can mince the garlic in a food processor.

    Melt butter in a large skillet over medium heat. Allow butter to reach a foam, and then increase heat to high.

  6. Step 6

    Turn the shrimp into the skillet for even distribution.

  7. Step 7

    Let the shrimp cook for 1 minute.

  8. Step 8

    Add garlic to the skillet and cook for another minute.

  9. Step 9

    Turn shrimp over in the pan and let cook for another 2 minutes. Remove the shrimp and place them in a large bowl.

  10. Step 10

    Add the vermouth and lemon juice to the pan to deglaze. Add lemon zest and parsley. Spoon over shrimp and serve.

Tips & Warnings
  • Serve the shrimp hot with a fresh squeeze of lemon juice.
  • Use lower fat butter and less vermouth to reduce caloric intake.
  • Some shellfish causes allergies in sensitive people. Immediately seek medical attention if a guest demonstrates signs of an allergic reaction, such as shortness of breath or swelling.
