How to Make Ice Cream Sandwiches for Grown-ups

I can't take credit for making up this recipe, but had to share it with everyone. These are the most decadent ice cream sandwiches ever. They are a fairly involved to make, but are delicious!

Difficulty: Moderately Challenging
Instructions

Things You'll Need:

  • 1/2 Gallon Haagen Daas Vanilla Bean Ice cream
  • 1/4 Cup Bailey's Irish Cream
  • 1/4 Cup Kahlua
  • Brownie Mix
  • 2 Eggs
  • 1/2 Cup Oil
  • 4 oz Dark Chocolate
  • 2 Jelly Roll pans
  • Wax paper
  1. Step 1

    Line a jelly roll pan with wax paper.

  2. Step 2

    Let the ice cream soften and mix in the Bailey's. Spread it fairly thinly across the jelly roll pan. Cover with plastic wrap and freeze. You can let this sit over night so you don't have to do the whole project all at once.

  3. Step 3

    Make the brownies by following the directions on the package, and add the Kahlua, eggs, chocolate, and oil.

  4. Step 4

    Let the brownies cool and use the heart shaped cookie cutter to cut the shapes out. Spread one layer of the hearts out on a jelly roll pan. Set aside the rest to be the top layer of the sandwiches.

  5. Step 5

    Take the ice cream out of the freezer. Remove the plastic wrap and start cutting heart shapes. Place one on each heart shaped brownie and set another on top as the top of the sandwich.

  6. Step 6

    Serve and enjoy. Yum!

Tips & Warnings
  • The ice cream will melt quickly, so move fast while cutting out the heart shapes.
