A classic with a nice plate of scrambled eggs, home fries satisfy that morning empty feeling - in a big way. Serves four (or one extremely hoggish hungry person).

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 lbs. potatoes
  • 3 tbsp. butter
  • 1 tbsp. extra-virgin olive oil
  • Groceries
  • Large Pots
  • Skillets
  • Skillets
  1. Step 1

    Cook potatoes in a large saucepan of boiling, salted water for 12 minutes, or until just tender.

  2. Step 2

    Drain potatoes and cool.

  3. Step 3

    Melt 2 tbsp. butter and oil in a large heavy skillet over medium-high heat. Add potatoes and saute until golden, turning occasionally, about 18 minutes. While cooking, add another tablespoon of butter at the nine-minute mark.

  4. Step 4

    Serve warm, perhaps with ketchup or Tabasco.

Tips & Warnings
  • You can make the potatoes through Step 2 a day ahead of time. Simply cover the drained and cooled potatoes and chill until you need them.
  • You can also add chopped sautéed onion, bell pepper, or even mushrooms to your home fries.
  • Yukon Gold potatoes have a nice buttery flesh, and they won't fall apart as bakers (Russets) tend to.

on 2/21/2006 A little spice goes a long ways. Back when I worked in a restaurant acclaimed for awesome home fries, we threw a little bit of everything into it - the most important being paprika. It gave a good flavor along with a great color. I think we also threw in black pepper, garlic, and cumin to the mix, though I'm not completely sure on it. Use your imagination, it's really hard to mess up home fries.

on 2/21/2006 Cayenne pepper. Lots of Cayenne pepper, and cook them until they're brown enough to be seconds away from burning. A great, great snack to serve up after a long night of clubbing.
