How to Get Burnt Food Off a Cast-Iron Skillet
Well-seasoned cast-iron pans fill the role of workhorse in the kitchens of veteran cooks. The repeated seasoning and proper care of cast iron develops a protective coating that imparts a rich, deep, earthy flavor to your foods. Add hot water to the pan until it reaches just above the burnt-on food. If the food sticks to the bottom of the cast-iron pan, add 2 inches of water.

Place the pan on the stove over medium-high heat. Bring the water to a boil.

Scrub the burnt-on area gently with a stiff-bristle brush or wooden spoon until the burnt-on food is gone. Rinse the pan completely. Do not use soap.

Dry the pan with a towel. Spread a thin layer of shortening or canola oil over the inside of the pan, using a paper towel to spread it without any excess.
