How to Make Brown Butter

Okay, so if black butter is really brown, what's brown butter? Well, it's brown too ... just lighter. It has a slightly more delicate taste than black butter, and it's also used on fish, as well as white meats and vegetables. Makes enough to use as a sauce on two to three portions.

    • heavy saucepans
    • 1/4 c. unsalted butters
    • Heavy Saucepans

        Cut butter into pieces.

        Heat butter in a heavy saucepan over medium heat. Stir the butter or swirl the pan so that the butter doesn't burn.

        Remove from heat when butter turns light brown and gives off a nutty aroma.

    Tips & Warnings

    • The butter will continue to cook a little even after it has been removed from the heat, so take that into account.

    • Try adding a little lemon juice to the butter, or some finely chopped parsley.
