Vacuum sealers are machines that utilize a food grade plastic bag to vacuum seal food for freezing and preservation. Chamber vacuum sealers come in countertop and commercial models. They can be single- or double-chamber models, with most commercial sealers having double chambers. All vacuum sealers operate with the same basic functions of removing air from the plastic pouch and sealing with a heated seal bar. Chamber vacuum sealers have powerful vacuuming power due the use of a vacuum pump rather than a vacuum channel.

Chamber vacuum sealers have knobs that allow the user to set the amount of air removed from the vacuum bag. There is also a timer for the seal bar that must be set before sealing a bag. Thicker bags and bags with extensive amounts of free space will need a longer vacuum time than small, full bags. Once the vacuum chamber is preset, the user puts the food into the vacuum bag. The entire vacuum bag goes inside the chamber, with the open end of the bag placed under the sealing bar.

Once the bag goes inside the chamber and the lid closes, the machine pulls all of the air out of the chamber and out of the food bag. Once all the air is gone, the sealing bar presses down on the edge of the bag, sealing it with an application of heat. The heat from the sealing bar is extremely high so that it can fully seal the specialized bags used for vacuum sealers. Regular food bags cannot be used with a vacuum sealer for this reason. The main difference between chamber vacuum sealers and external vacuum sealers is that chamber sealers can seal liquids, while external sealers can only seal solid objects.
