How to Grind Beans into Flour

Sort dry beans and check for rocks or soil pieces. One pound of dry beans will yield two cups of bean flour. Place two cups of beans at a time into a grinder or food mill. Cover the top with a kitchen towel to reduce bean dust and begin to grind. Larger beans like lima and fava should be cracked in a blender for easier grinding. Chick pea flour, lentil flour, black bean flour, white bean four and fava flour are ideal for bread baking.

When baking, substitute up to 1/4 of the total amount of wheat flour called for in a recipe with bean flour. When using bean flour as a thickener, create a paste with 1/4 cup of bean flour and enough water to moisten. Stir the mixture into your soup, stew, gravy our sauce. Storing Bean Flour

Bean flour should be stored in resealable plastic bags or air-tight food storage containers. Flours will stay fresh for up to six months. Bean flour can be frozen for extended shelf life.
