    Freezing

    Defrosting

    • To defrost frozen smoked salmon, place your baggie in a bowl in the sink and run a steady stream of cold water over the salmon. The fish defrosts quickly so keep an eye on it.

    • If you buy canned smoked salmon, your unopened cans will be safe indefinitely in a cupboard. Once opened, consume within three days.

    Types

    • If you are unsure of the variety of smoked salmon you have, check the packaging label. Hot-smoked salmon should be labeled as such; lox is cold-smoked.
