1 1/2 cups sugar
3/4 cup light corn syrup
4 tablespoons butter, melted
6 tablespoons bourbon, whichever brand you prefer
6 eggs, lightly beaten
9 ounces dark chocolate chips
1 1/2 cups pecan halves
1 1/2 cups pecan pieces or chopped pecans
1 pre-baked (9-inch) pie shell
Preheat an oven to 375ºF.
In a large mixing bowl, whisk together the sugar, corn syrup, butter, bourbon, and eggs. Stir in the chocolate chips and pecans. Pour the mixture into the pie shell and place the pie onto a baking sheet.
Bake the pie until the top is deep golden brown and the middle is just set, 35 to 40 minutes. Allow to cool completely before serving, at least 1 hour. Serve warm or at room temperature.
