"Hi, I'm Jennifer Cail and on behalf of Expert Village, I'm going to show you how to make fun delicious gingerbread men. Now that we have our dough all mixed up, our next step is to let it cool down. What we're going to do is to divide the dough into three parts and then it needs to cool for at least three hours in the refrigerator. If you're running low on time, or you're in a big hurry, then you can instead of putting the dough in the refrigerator for three hours you can also put it in the freezer for one hour instead. It takes about a third as much time if you put dough in the freezer than if you put it in the refrigerator. If you don't want to use it immediately, then you can also put the dough either in the refrigerator or in the freezer for a more extended period of time. The refrigerator only for a couple of days. But if you want to save the dough for a while, perhaps get ready for your Christmas cookie baking a couple of weeks in advance, if you store your dough in a air tight container or wrap it up really well in saran wrap plastic wrap, you can leave it up in the freezer for up to a month before you really need to use it again. So that's a great alternative for somebody who is really busy. If you want to devote a couple of hours to making doughs, you know one night here and one night there and then you want to bake them closer to when you need them."
